In the near future I will need to have my iPhone and iPad batteries replaced. I plan to have Apple do it. I know that I need to back my my data, but do I really need to erase my equipment? They will be locked without my password or fingerprints.
 
I’m pretty sure that “wipe all data” is a boiler plate requirement anytime you give a device to Apple for repair. This simplifies the process should Apple decide to replace the device rather than repair it. They may need access to some settings to verify the repair which they couldn’t do with your phone locked.

If you’re taking it to an Apple store for the replacement I’d hold off on wiping it. If necessary the Genius will tell you to wipe it right there (takes only a minute). If you’re sending it in I’d go ahead and wipe it just to avoid the possibility it would be sent back to be erased .

No need to wipe but back up just in case. Had battery for my 6S replaced two years ago and I think I turned off Find My... though. Give Apple a call and they will give you the necessary instructions.
 
What about my SIM card. Do I need to remove it?
When I had my battery changed, I made an appointment and I took it to the store. They wiped my data (I had already made a backup). They did not remove the SIM card. I had it back within 1 hour. I ate lunch. I then returned to work. Easy and pleasant experience.
