I plan to replace my iPhone X battery sitting at 97% health before the end of this year

It's cheap and I'd rather get it replaced by official Apple store rather than resorting to replacing one myself or getting it done via 3rd party down the line..

The question is..if I get the battery serviced by Apple, will my phone still retain water and dust resistance? It's my understanding that IP67 rating is achieved via a bunch of adhesives and glues...will these protections be gone after going through the repair or does Apple have the ability to restore this as well?

They DO reapply them, so yes, it will retain the waterproof rating.
