I know the new Beats Studio Buds have spatial audio compatibility for music, but no H1 chip. How does this work for watching content on apps like Disney and the Apple TV app that support spatial audio. Is it the same as AirPod Pros, but without the head tracking capabilities?

I’m interested in these but would like to know before deciding on whether to purchase.

Probably. Apple is playing a little "trick" making it sound like they are doing WAY more than they really are. Dolby Atmos/Spatial Audio is just an audio track and Apple is passing it on. You can play Dolby Atmos/Spatial Audio on ANY headphones off any device. Go here to the Dolby site and hear for yourself using any computer/smartphone and any headphones.

BSB support Spatial Audio for music only. No head-tracking like AirPods Pro or AirPods Max.

I believe iOS 15 and related software is adding "Spatialized Audio" which still isn't head-tracking (without compatible hardware) but close to it.
