I received a bedtime alert the first night of having iOS 10. I have not received a bedtime alert since then. Help!

Try turning off the Bedtime switch and back on. That did the trick for me.

However, now I decided I do not want to be told to go to bed and you actually CANNOT turn it off!

Careful what you wish for...

What version of iOS are you on? It's improved since iOS 10.0.0 but still has some issues on iOS 10.1.1. Might be better on iOS 10.2 (currently in beta), but I cannot confirm that.

Haha that is correct! There's no way to turn this reminder off, which some nights is annoying.

I turned it off and then back on. It is working as designed now.

Why can't you just turn off the reminder if you don't want it? I can't look right now, but isn't that an option? Or you could use the regular alarm feature.

What's annoying is Siri doesn't recognize this as an alarm, so if you ask to see your alarms, or your bedtime alarms, it doesn't know what your're talking about.
