Apple seems to have removed the Bedtime/Wakeup feature.
This was an option accessed via an icon on the Clock/Alarm/Stopwatch screen.

It allowed one to set a "go to bed" time and a "wakeup" time. At the "go to bed" time a little lullaby tune would sound with a "time to go to sleep" reminder, and at the "wakeup" time, a gentle alarm sound like gently chipping birds would awake you. When the wakeup sound played you had the option to snooze it, and it was fully customizable as to which days it was active. As you manipulated the sliders representing your "go to bed" & "wakeup" times, it displayed how long your sleep would be.
 
It is now in the health app in the new sleep section. Now you can set up multiple sleep/wake up alarms.

Ah, thanks.

But I actually use my iPad for this -- I take it to bed and read books on it until I'm ready to sleep, then place it on my nightstand. And wake up to its chirping birds...

There is no "Health" app on PadOS. (soapbox: why not?) so no Sleep function?
