I am a bit confused about the Bedtime feature. I just set it up to wake up at 4:30 am Monday - Friday. I am assuming I will get an alarm notification at this time. If my phone is on mute (or the volume is low), will this alarm still go off with a loud tone? This was a problem in previous iOS versions. I would have an alarm set to wake up, but would never hear the notification sound because my phone was on mute.

Also for Sleep Analysis. How does my phone know that I am actually asleep if I do not have the watch to detect movement?

The alarm has worked while on mute for years now. And I started using it this morning and it again worked fine on mute, to ease your worries. If you set it to wake you up at 4:30 am Monday through Friday that's when it will go off. I set a secondary alarm just in case outside of the bedtime settings. The bedtime alarms aren't particularly loud.

From my usage so far, yes it will play loudly whether your phone is on mute or on low volume. The phone uses its sensors to detect movement, unfortunately if you put your phone on a bedside table it will register you as asleep until you move it.

I'm guessing if the phone was under your pillow then it would be more accurate, however charging your phone under a pillow isn't a great idea!

Yes, in previous iOS versions the alarm will go off when the phone is on mute. However, the sound will be muted.

I haven't experienced that in at least the last 3-4 years. My alarm has always gone off even while muted. That's still a problem on Android though.

Anyway, that's not an issue anymore so you have nothing to worry about. It's all good in the hood.
