Hi,

Currently using Apple products for everything but want to build a decent PC for gaming. I plan to use that as my main computer for other stuff such as browsing etc for ONLY work stuff so want it secure. Will be buying a VPN server and turning off as much Microsoft tracking as I can.
My question is related to my iPhone and iPad...

What browser can I install that is cross platform that has security in mind. Something that I can stop all tracking but still allow myself to have favourites pinned etc. Must be something that has an iOS app, max app and a windows app/program.

Firefox is available on iOS (hence iPhone and iPad), and it allows you to sync bookmarks and passwords between desktop and iOS devices with a Firefox Account. The iOS Firefox has some privacy enhancing features (blocks most tracking), while the desktop Firefox has a wide variety of extensions to deal with privacy and security.
 
Include AdGuard Pro in whatever you do - their latest DNS filtering protocol is good too.

I use to be Mozilla fan, then FF - never Chrome! But lately like how Edge now syncs everything.

Firefox is really your only decent option for security/privacy in my view but I do like what MS has done with Edge recently but that is not going to be a favourite for tracking as you mentioned.
 
AdGuard filters tracking.
You can use their free DNS
The built in ad filtering is insufficient
Turn off 3rd party cookies

 
Edge does not track anyone after toggling a bunch of toggle things in settings.
i felt they were the safest until Safari released 14.0.
I used that edge browser on the ipad and dell xps in 2019 and bookmraks-tabs synced very well.
Firefox want updates every week and Opera crashed and let a malware slip through and took over the ipad.
luckily i prevented anything malicious for infecting the ipad.
this is my 2 cents and experience.
i wish safari was available for PC and swindows, but that is asking way too much

And of course AdGuard.

And you can’t change the homepage. How convenient that you can’t but they have the new thing which says that they tailor ads and content. Erm no
 
You arent looking. The defaults can be changed, easily, and turned off. You/we/I sometimes see what we want to see, or not see.
 
Ive looked everywhere. How can I change the default homepage then?
As is typical for many sites/apps, have you tried playing around with some options (like trying the "hamburger" menu at the top right)?
 
I’ve tried that. It doesn’t show anywhere, where you can change the homepage.

Seems like you were able to change what's being used and shown compared to what was in the previous screenshot. In terms of something like changing the actual home page to something else, not sure if Edge offers that (might be something somewhere in settings) -- it seems that a variety of mobile browsers don't really offer something like that, including even Safari.
