I just boght an

Apple iMac "Core i5" 3.0 21.5" (4K, Mid-2017) Specs

Identifiers: Retina 4K, Mid-2017 - MNDY2LL/A - iMac18,2 - A1418 - 3069

cause my beloved 12.1 (Mid 2011) has gave all that it had, now I got aa specific plan and I have to decide for the best CPU, replacing the actual i5-7400 with 65W of power, considering also that, I don't play, I use it for work, especially for virtual computing and sometimes for video editing.
In my 2011 I used a fantastic e3-1275 XEON and I would like to do the same for this new one, using Kaby Lake or Skylake, since I suppose that Coffe Lake is not supported by bios, while socket and RAM should be ok.
I have 3 possible Xeon choice, a cheaper e3-1270v5 Skylake (power 80W) or a better e3-1270v6 / e3-1275v6 (both 73W), these ones cost almost 3 times the Skylake, comparison gave this results:
i5 (actual) has mark: 5503
x3-1270v5: 8342
x3-1275v6: 9213
x3-1270v6: 8921
Actual RAM is 16G of 2400Mhz DDR4 (it support also 2666), and sometimes I wonder if in a near future it could support also Coffe Lake gen.
The choice is about the advantages of Kaby (less hot and a little more power, including the native routines for 4k) and the cheaper Skylake.
Any suggestion?
