+1 on Penultimate. It's the first pen/ink app I've seen that is actually so responsive that it feels like ink. I've tried a bunch and I've found this to be the best. Now if they'd just add text entry.
 
evernote. It seamlessly syncs to all your devices running evernote. Its really nice to take notes in class, and have them automatically on your phone, so you can go over them anywhere

Looks good! Are you using a stylus with it? If so, which one?
 
I'm stoked about Penultimate.

SoundPaper looks pretty cool too. It records while you type and when you're done with class and review your notes, you can tap on a word you typed and it will move to that part of the recording. I haven't used or downloaded it, so I don't know how accurate the app is.
