Just picked up a 27" 2019 iMac (i9/580X).

What's the best OS if the criteria are just performance (e.g., minimal interface lag) and stability: 11.6 (Big Sur), or 12.4 (Monterey)?

I don't care about the feature differences between the two, and my apps will run fine on both. Monterey is supported a year longer, but both will get me to fall 2023, when Mammoth (MacOS 11) is on v. 6, at which point I can switch to that. [I've heard Mammoth is a refinement-focused update, and those have always been my favorites, like Snow Leopard and High Sierra.]

Based on what I've read generally about these, Big Sur would be the better choice, both because it's fully mature (it's now on its final version,so all the significant bugs should have been addressed), and because reports are that Big Sur is, overall, less buggy than Monterey.

But none of these have addressed performance and stability on a 2019 iMac specifically.
 
Monterey seems to have had no issues for me on several iMacs I own, though Big Sur is definitely more stable at the moment. I would probably do Big Sur, I see no reason to go to Monterey unless any of the features tempt you.
