For those who use Mac Pro 2013 (6,1) for video editing and are looking for the best OS to use, taking in account render speeds, smooth editing, and project time finishing demands, what is the OS that is overall gives the best overall performance?

Using a Mac Pro 2013 (6,1) 12-Core 64 GB RAM 1 TB SSD

I owned the exact same machine as yours until two months ago.

Based on my experience the most stable and fast performance I got was from Mojave. Tested Catalina but with no success as until 10.15.5 got problems with external thunderbolt raid and was a continuous kernel panic so I reverted back to Mojave.

Yes, I am debating on whether to stay with Big Sur or go back to Mojave. Big Sur is not bad...but I think Mojave might be better for FCPX overall, but again not sure. Hope others can give opinions. Thanks for responding.

Another thing I noticed is about FCP perfomance. After 10.4.6 the slow down are visible. In my opinion 10.4.6 was the fastest FCP from time. I'm using 10.5 right now and it seem to work fine (but as you can see I'm now using a mini with eGPU and I'm under Catalina).

Yes, I also heard about FCPX 10.4.6...

I think the latest FCPX is more configured for the T2 chip and that is why maybe the noticeable concerns.
 
I use 5,1 MacPro with the highest Xeon 12Core processor, but same thing here....10.4.10 it was terrible on Mojave 10.14.6... after than I upgrade to Catalina and upgrade FCPX to 10.5. actually works fine, but it's true the 10.14.6+10.4.6 was the strongest combo
