One of the easiest IMO is to actually have a real schedule in Outlook calendar then export them to excel or just for presentation a calendar is easy to create and customise etc etc in excel.

LaTeX is a great option. There are a lot of packages to typeset schedule-like data. Tikz calendars package is a good example.

Have you checked through any of the free templates for Excel? Microsoft has their own, plus several sites have a lot of ones made by others that are free to use. I generally use one of the basic ones from here, since the formulas are already configured...
