Best way of connecting ATV to 2 different screens?

I will be getting the new ATV and i'd like to connect it to two a projector and a TV which i will watch on separate occasions. The ATV only has one HDMI output - how would i do this? If i get a splitter box, surely the quality will be diminished?

With ATV1 you had the HDMI output and the component... Is really the best way now for quality to just plug/unplug every time? (a chore! )

I use one of these to connect my mac mini to my two TVs.

I don't know if it carries audio as my 2009 mac mini doesn't output HDMI, I use a DVI to HDMI converter. If I'd had a crystal ball I would have waited for the new shape mini, why do Apple always do this to me!!!

i read that splitters have an effect on the quality of the video..

If ypu split a standard coax cable the quality takes a bit of a hit, but looking at the above referenced hdmi splitter, you should be fine, as its essentially just repeating the digital signal.
