You can use the above link as a great source for ideas. For themes, I usually look for a completely customized look, including the dialer. If you just want a simple change, look at Eclipse 3 or Nightmode. Eclipse 3 has the advantage of colorizing everything to any color combination you can imagine. Both are paid tweaks that can be found in Cydia.
