I have a new iPhone 5 waiting on me at home. I currently use a 4S and my wife uses a 4. My 4S is JB. Her 4 is not. I'll be swapping to the 5 and will be giving her the 4S and selling the 4.

When I erase all data on the JB 4S will that wipe the JB and put it back to factory? I would update it to iOS 6 and she wouldn't use any of the JB features.

My other question is around how best to swap devices for a clean start? Backup to iCloud and erase all and setup as new then restoring from ICloud?

erasing all settings can't be done on a JB-en device, it wil go in to a loop.

You need to backup and than restore the new firmware with itunes setup as new device and than put back her backup of the IP4.

Great. Thanks. As far as all of the JB apps on my 4S how do I save what I've gotten from Cydia and themes like Jaku? I took screenshots of my settings menu showing which apps I was using thinking that I could just refer to that when iOS 6 does get JB - en.
 
pkgbackup or xbackup in cydia to backup your jailbreak apps.

regular itunes backup saves all your settings inculding jailbreak app settings, just not the app itself

I tried backing up via pkgbackup but it kept popping back to the home screen. I guess I really dont need to keep that actual data as it was really just actual settings vs. data....so I can swap my number to the iPhone 5 and then restore the 4S to stock or should I restore the 4S to stock first?
 
It's been asked by thousands of people whether the 'erase all content and setting' works under JB devices. NO! You need to learn to search. The dev team needs to disable this button!
