Noob alert!!

New to laptops so not yet sure how to do some chores I do nightly on my iMac.

MacBook Air Mojave 10.14.8

When I go to sleep, I often use Handbrake to convert a group of files to mp4. Dealing with a battery, unlike the iMac, I will keep it plugged in but what settings would be best used to keep it working, without being detrimental to the battery. Or does that even matter if it is plugged in?

Do I just uncheck "Prevent computer from sleeping automatically when the display is off" as well as unchecking "Put hard disks to sleep when possible"

Agreed. With today's battery and charging technology you don't really need to worry about battery health so don't worry about plugging it it or not or for how long - use it how you want.
