Is a clean reinstall of the OS the only way to revert back to 10.6.6 from 10.6.7, or can I just pop in the USB recovery stick and click "install" (mine has 10.6.5 on it, so I'd then update to 10.6.6 using the files from Apple's website).

Clean install is the only way, as a normal install will keep the 10.6.7 update.

Make a Time Machine backup and import your personal data during Setup or after you created your new account.
Download Carbon Copy Cloner (free) o SuperDuper! (the free version is fine and has always worked for me) and install it. Pop in an empy or BACKED UP USB HD and clone your HD content to the external (partitioned is fine).
Now boot your Mac holding down the option (alt) key and select your external as the boot drive. Play around to make sure your HD was succesfully backed up onto the external. Insert your USB key and clean install SL in your Mac. When prompt plug in your external and migrate your *old* content to your fresh SL. Download and install 10.6.6 from Apple wesite (delta update is recommended).

Ok--I think I'm good with all of the steps except how to migrate the clone onto the fresh install. Is the "prompt" above referring to migration assistant (will it ask me if I'd like to migrate from a USB clone?)? Or, do I drag and drop files? Or is there a different program that will replace everything for me?

Just boot up from the install media, don't run the installer from within your existing installation. Once the computer has started up it will then just install whatever version of the OS is included on that without the latest updates. No need to format your drive or anything like that.
Be certain you have a backup before doing this in case something goes wrong.
chrfr, so you're saying that I *don't* need to clone and do a fresh reinstall? That if I boot and reinstall from the USB stick (by pressing C as I boot, right?) that it will save all of my settings and data, and will still revert back to 10.6.5 (the version on the stick)?

Although I don't know what you can do to get back to 10.6.6. The only update you can get now is the combo update, at least I think that's the case...

I can confirm that chrfr's method of reverting was quick and painless, and it does work. Just plug in the USB stick, hold down "C" while restarting, and install from there. This nicely reverts the OS back without having to wipe the hard drive, and without ever having to restore any data.
Also, to get back to 10.6.7 without combo updates, you can download the incremental updates directly from Apple here: http://support.apple.com/downloads/#macosx106

How do you make or obtain the "USB recovery stick" you referred to in your previous posts? I'm also trying to revert from 10.6.7 to 10.6.6. I have a Western Digital external hard drive attached via USB, and I have all my files backed up. Where do I go from here?

It came with your MacBook Air, in the little black box with the guide and apple stickers. Or, if you have a computer other than an Air, then you just use your recovery CD.
