Best way to transfer to new hard disk

Hi there - need some advice
I just bought a new 300Gb maxtor maxline III (actually, i bought 2 of them). Currently my system has a 160g hard drive in it. what i'd like to do is 'mirror copy' the entire 160g disk to the new 300g disk and make that my new startup drive. then install the 2nd drive as a 'data' drive. What is the best/easiest way to perfrom this task? I noticed that i have the option of formatting the new drive as either UNIX or Mas OS (Journaled). not sure what is better...

SuperDuper or Carbon Copy Cloner.

I've only used SuperDuper and it worked great for me.

i use super dupder. it's great, makes a bootable clone of your hd. this basic function is free. it's super easy to use.

i made 2 partitions on my hd. one has a clone of my old 10.3.9 on it, the other 10.4.2. so i have always my trusty old system around.

superduper has also a smart backup function for $20 shareware fee.

One more question (probably a nit so i apologize)

in the finder screen there is the menu bar on the left - it shows the various disks available to the system, and has shortcuts to frequently used folders - like the desktop, applications, documents, etc.

i want to move all the 'data' folders to another disk. i was able to copy and paste them, but when i put the folder names into the finder browser on the left, the cool icons are gone. anyone know how to get those back?

When you use SuperDuper, will it erase anything that already is on an external drive or will it just copy from the internal disk and leave the other stuff alone? I'm interested in using the program but I have some other stuff already stored on my external drive and I don't want the bother of having it erased in the process (there's lots of room on the external drive so space isn't an issue)

When i used super duper it nuked the destination disk and made an exact clone of the source.
