This is an older phone so I'm fine leaving it on 6. I mainly want to have the Matte UI and Realize themes on it.

Uhm...you can't.
You can only upgrade to the version of iOS that Apple is still signing. Usually that's the latest version. Right now that would be iOS 8.1
You've missed the window(s) for updating to iOS 6 and 7 entirely.
I know you can't officially, which is why I'm asking in the Hacks section.
Previously you could change a host file on your Mac so iTunes would activate against an alternate server.
Apple killed off that trick many versions ago (iOS 5 or 6 I believe). Newer versions require a unique token (APTicket) for each restore, making it impossible to fake out iTunes by changing the hosts file and using saved SHSH blobs. At the moment, your only option is to stay where you are or upgrade to 8.1 (which is jailbreakable at least).
