Is it better to start from scratch with the GM? For example, I’m still having the issue where some apps won’t remember my login info and also feedback assistant is still installed. Thoughts? Thanks.

I didn’t but plan to start over soon. I’ve archived a ios 11 backup and simply installed the GM, I plan to do a DFU install at some point after Monday so that way it’s pure iOS 12 with nothing odd carried over.
Delete the profile and restart will remove the feedback app. I would wait till tomorrow since it will be released for everyone. DFU restore the device. Just make sure to backup in case.

If you delete the beta profile from Settings this will also remove the feedback assistant app from your device. From that moment on you will be back on the usual general public track, just having iOS 12 slightly earlier than everybody else who can install it from Monday onwards. Considering that your current GM is likely to be exactly the same thing that the general public will be getting tomorrow, you could just wait for the upgrade rush to settle and then do a fresh iOS 12 install via iTunes (Restore). As @Banglazed mentioned above, make sure to back your stuff up (either in iTunes or iCloud) before restoring.
Your apps not remembering the logins is not probably related to the iOS 12 itself, so you might need to renter this info.
