The strangest problem. The title says it all.

Touch ID fingerprint disappeared. As if it were never configured. Had to add it again.

Well - it happened again twice. More details:

2020 13" MBPro 2.3 GHz 16 GB 1 TB laptop goes to sleep. Sometime during the night, Big Sur crashes. After waking up, very common message is displayed: "Computer restarted due to a problem".

Observations:
- TouchID fingerprint disappeared
- Several programs no longer have Full Disk access in System Preferences

After restart, these programs receive Full Disk access - no changes needed. But TouchID does not return.

Not as far as I know. I keep an up-to-date bootable installer that I can download using the MDS app, where you can check for other possible macOS downloads. 11.6.2 is not listed as a general (production) release, but is listed as a developer's version. It has had at least 3 versions of the 11.6.2 full installer since being made available. There's no restrictions to using MDS to download that version.
(of course, I don't know if your issue is fixed with that update to 11.6.2, and the public release of that version might be coming in a few days (I don't know Apple's release schedule...)

Upgraded to Big 11.6.2. Touch ID disappeared again after an overnight kernel panic while in sleep mode.
