But... I'm not seeing any available software. The App Store version (https://apps.apple.com/app/macos-big-sur-beta/id1497794093?mt=12) is from two weeks ago so not compatible. Any ideas?

Me too... No upgrade of Catalina to Big Sur Beta 6 being offered in Software Update after enrolling in the Developer Seed Program. (2020 27" iMac).
I tried viahttps://apps.apple.com/app/macos-big-sur-beta/id1497794093?mt=12 which is now saying updated 18h ago but I'm still getting "Update not found: The requested version of macOS is not available." :-(
I would not recommend trying to download, got stuck a few times and had to wipe to get it working again. Curious to see if anyone else found a workaround.
