My iCloud-synced bookmarks seem to have disappeared from my 3rd generation iPad today. I tried toggling "Safari Syncing" in iCloud settings, with no effect. My iPhone still displays the bookmarks properly.

Is anyone else experiencing this issue?
 
I've seen mine disappear as well. Usually restarting the device brings them back. To restart it, hold down the Home button and the Sleep/Wake button until you see the Apple logo and then release them.
 
My problem is the reverse. (I'm relatively new to iCloud-enabled Macs).

I do NOT want my Safari Bookmarks synced between my Mac and iPod Touch. How can I disable this? I'm guessing that un-checking the "Safari sync" option might do the trick?

Yes, un-check it on the Mac and turn it to off on the iPod (Settings>iCloud>Safari).
