Could anyone point me in the direction of installing MacOS on a bootable RAID array, preferably Big Sur or Monterey?
I have a mid 2012 MacBook Pro (non-retina). I have two internal SSDs and have installed MacOS Monterey (no RAID) using Open Core.

I understand that MacOS may have officially stopped supporting bootable RAID arrays with High Sierra (10.13). But I also have an unsupported version of MacOS installed currently. I have also seen posts of people successfully booting Catalina off of a RAID array.

My question is: has anyone seen info regarding bootable RAID arrays for Big Sur or Monterey? Have you seen any for Catalina?

Quick question, why RAID 0? The SSDs connected should provide fast data transfers (Random 4K @ QD1) for your day to day tasks. Also, in RAID 0 you have a huge data loss risk should something happen to the array.

Great question. The goal for RAID 0 is a sort of project to see how far I can push the old machine. I understand that it is not very appropriate for daily use. But seeing as each of the drives are limited to SATA 3 speeds, it would be pretty neat to move closer to the 1Gb/s range.

The thing is, you'll be sort of limited still as only two SSDs won't provide a higher push than the SATA 3 connection. A good SSD already provides 19,000 IOPs @ 4K QD1. That's close to ~77 MB/s.

At RAID 0, you might see around 120-150 MB/s.

Year or two ago I’ve seen a video on YouTub about that, and as I remember the guy installed macOS on an internal disk, then removed it to boot from it externally, installed the two SSDs he wanted to RAID, then booted from the fore mentioned external macOS disk, made RAID of two internal SSDs, cloned the external macOS to them, and rebooted internally.

Note that my description may not be accurat, because I am just using my memory, a tiny detail may corrupt the whole mission, so search and try. I hope to hear back from you.
