Hello,
As the title suggest, I'd like to ask if I can jb my device? It's new and came with 5.1 on board so I wasn't able to update to 5.1.1. Is there any chance to update to 5.1.1 even after Apple released iOS 6? Or maybe I can update to iOS 6 and then jailbreak is that already possible? I need to jb to get color profiles, my screen doesn't look good on low brightness...
 
Same situation here too. Can't jailbreak my new IPhone 4S on iOS 5.1 9B179 since apple stopped signed ios 5.1.1. Since I need the Gevey to unlock, I am not keen to move up to ios 6, which risks updating the baseband. Since iOS 5.1 and iOS 5.1.1 are not so different, is there any chance if the jailbreak will be made available on iOS 5.1 as well?

No I wouldn't think so. Historically speaking, when they've skipped firmwares for a jailbreak they don't go back and release a jailbreak. If you need an unlock I highly suggest not using a gevey. Instead, use a grey market imei unlocker. That way your phone will be officially unlocked. Jeff Benjamin from idownloadblog just recently had a post talking about a service he used that was affordable and super easy. Cutyoursim offers unlocks too as well as Chronic. Or you can look at all the threads on this site which discuss gray market unlocks.
