Plugged in my brand new Studio, went through pairing mouse and keyboard and it prompted me that I needed to update my software to 12.3. It’s been now sitting for 1.5 hours and the progress bar hasn’t moved. Wondering if I should just turn it off and try again or leave overnight. Anyone else have this issue with their new Studio and have a solution?

Mine prompted for the update, but I skipped it and did it later. Never updated through the first time set up before, but 1.5 hours seems excessive. If it were me, I'd probably reboot it and try again. Perhaps skip it this time and install through the normal software update.

My Studio came with the latest version on it. Not sure why they shipped ones with different versions on them.

Mine failed during installation when setting up. Updating after setup when logged in worked though.

Yes mine did the update and it took a while about one hour, but it has restarted 3 times before it completed the update the first 2 times it would be there doing the update for about 20 / 30 minutes almost finished and then restarted and start everything again. It was pretty strange.

It did! I always dread having to update a new machine since it takes a day to transfer over all my apps.
If its the paired migration with both computers next to each other, it can be a bit time consuming dependent on how how must applications/data your previous Mac had, but it still usually goes rather well compared to the old days. Alternatively I just used a bootable snapshot on a SSD via CCC, then migrate from that external volume as a source using Migration Assistant.

My Mac Studio/M1 Max required an update and I did it during installation. The opening time estimate was 30 minutes. I didn't time it, but I think that that wasn't far off. It might have taken a bit less.

I ended up restarted it and it rebooted itself 2 or 3x through the process. It was definitely acting strange but ultimately came through in the end

12.3 update does that on occasion, its still not perfect 100% but just recognize its trying to verify its in the right state before it installs.

MacOS 12.3 wasn’t released until March 14, which was after the Mac Studio event. So, if your machine was manufactured and boxed prior to that, 12.3 would not have been available to install.
