pair the os 3.0 and Plantronics Voyager 855 Bluetooth Headset today, but turns out it will not recgonize the mic in the bluetooth headset.. is there any solution to this? or we need to wait for the next OS or next gen ipod touch?

I'm curious about this too, and I haven't heard of any success stories yet.

well. my samsung wep301 does not pair too.
i guess they have some technical standard for those bt headsets to pair (adrp or something? not sure)

It doesn't have support for bluetooth headsets yet, only bluetooth headphones. That support is the weakest I've seen in a device, with no track fwd/back via the headphones.
Give it some time, as SURELY this is one thing they are still working on.
On a related note, the earbud/mic from my Samsung Cell Phone works with the Touch and the Voice Recorder app.
