Do Apple stores do BTO at the store while-u-wait? Or are they primarily fixed inventory? Thanks!

Fixed here in the UK. I have heard people saying that they will upgrade the Ram though. Not sure what it is like over the pond.

Some of the iMac 27" i7 without any other upgrades were reported to be in some Apple stores but that is probably the best you will be able to do...call ahead to see what they have
 
At the local Apple store in Los Angeles, they did have the i7 27" 3.4Ghz model, but with 1MB video memory and 1 TB HD - I wanted 2MB video & 2TB drive so I ordered BTO. Ordered on a Friday and was delivered on Thursday - 4 Business days
 
The best iMac you can get directly on Apple Store is iMac with i7 processor but the others are standard

Some may accept memory upgrade, but if you need to buy iMac with more BTO, they should provide preorder. In some case, customer prefer ordering via Apple Store for online order to ordering by themself and get it send to their own address.

In my place, there is no AppleStore, so for custom order, I contact my premium reseller and having an online order, there might be a little additional fee, but it´s tolerable
