I've reported this bug to Apple but I'm curious if anyone else has experienced an indue that I am having. It's a tad confusing to explain.

3 people that I regularly text have been grouped into one conversation (this is not a group conversation). When I choose to text one on the 3 people it sends it to whoever the last person that texted me.

When another of the 3 people sends me a text the whole conversation switches to the most recent person.

All of the texts that I was sent before iOS 12 from the 3 different conversations are now grouped 1 conversation.

Not sure if this makes any sense.
 
are these 3 persons in yr contact list? if not, and, you have Filter Unknown Senders ticked on in yr iMessages preferences they will be grouped together in a separate list.
 
All 3 people are separate in my contacts. Whenever one of them texts me the whole conversations switches to that contact. Then if another on of them texts me it switches to the next person. And all the messages now look like they've come from that other person.

The weird thing is it is still grouped by the 3 conversations on my apple watch. So I've had to resort to texting them from my apple watch only to force the conversation to move to that person.

I had that happen recently too, it was with 2 people that share an iCloud account. It was strange and has since corrected itself.

Actually I should have realized that before. All 3 are on the same icloud account. You're on the ios 12 beta as well?
