The Apple retail stores won't allow online purchases to be exchanged at the store.

It's possible, if your 11" is unopened and the store needs that model to sell.

Happened with me when the iPad came out. Wanted to exchange the 16 gig i got online with a 32 in the store and they took mine because it was unopened and they needed a 16.

I exchanged my 11.6 bought on line Apple Store at my local Apple Store for the 128SSD version. It's at their discretion but they were more than accommodating.

Its possible but there's no guarantee that it will work. As others posted, if the 11" is unopened then that will increase your odd.

I ordered something online and tried to return/exchange it at my local apple store was turned away stating that I'd need to return it via online since that's where I bought it.
