My 2016 base MBP is on its last legs (battery failing, it has to stay plugged in to run) so am eyeing the new M1 MBP.
My experience is that Apple has a lot of hardware issues when launching new laptops-I got my first white MB just after the “cheetos” overheating issue, and my MBP after that (also bought at launch) was a bit of a lemon-had hard drive, motherboard, and Bluetooth unit all replaced.

That was more than 10yrs ago, so I don’t know if these issues have continued to occur with more recent launches. Am I best to hold out until January to see if any launch bugs appear or finally put my current laptop to bed and move on?

Well, at least here in the US, Apple has started its Holiday return policy which extends returns up until January 8th 2021. So if you decide to test it out, know the extended return period is a policy.

These all use identical hardware as current computers, they just replaced the processor. So I doubt there will be any 1st gen bugs.

I had the original white Macbook and I remember the various issues such as the “mooing” fan and the random shutdowns. The first hardware after an architechture switch is always going to have some issues to work out.

Oh I definitely had the mooing fan! Thankfully I missed out on Cheeto-gate.

Hardware issues do seem to commonly occur with new launches, although it can be several months before the full extent is known. That said, it sounds like you really need a new system, so once reviews start coming in, if you like what you read it makes sense to purchase one with AppleCare+, since your current system is causing you issues.
