I found a local deal on a 2018 12.9” 3rd gen 64gb WiFi + Cellular with an Apple Pencil 2 and Smart Keyboard for $800.

It still has a few months of AppleCare left on it too.

Is this a good deal? Or should I just hold out for some future deals in the coming months. I definitely don’t need the cellular.

Is 64gb enough? I use mostly cloud apps but still store tons of ebooks and obviously with the larger size I’ll load up more shows and movies on it. I never used the full 64gb on my 10.5” pro that I had.

and then I guess after all that I have to ask myself if I should just wait to spend money on a non-essential lol

It sounds like a good deal. In Apple's Refurbished section, they have the 12.9 iPP 64gb at $699 (plus tax.) For a hundred dollars more, you are getting cellular (or the capability if you aren't going to use it), the pencil and the Smart Keyboard. The Pencil alone costs that much.

I have the 64GB model (though in an 11"). I've personally found that it's plenty of storage for me, as I use the cloud for a lot of things, and since we can use a thumb drive now, that could help too if you needed it. (I just checked; I still have 24GB free.) Whether it's enough for you depends on your usage.
 
64Gb is not amazing, but not bad either. And the fact you can plug in a removable drive into your iPad helps a lot. For example, in many players you can even watch videos directly from the external drive without copying them.
