My wife and I are getting His and Hers iPhones for Christmas. Any last minute advice short of just going down to the AT&T or Apple store and making a purchase?

If you and your wife tend to drop your phones alot, get a case like the inCase Slider or the Otterbox Defender. I cant tell you how many times I have dropped my iPhone 3G before with my incase and it avoided any damage at all thanks to that case.
 
If you're careful enough and don't drop your phones and would rather not have a case you may want to look into BestSkinsEver. You'll maintain the look of a naked phone and have scratch protection and a little extra grip. I love mine and recommend it to everyone.
 
Coming from a house with 4 iPhones in the family, I would say get a case for them, to personalize them so you know which one is yours right off the bat.

If you have only one Mac/PC, then make different playlists for each person to Sync, unless you want all of each other's songs.

Do get them Ghost Armored or InvisibleSheilded, I got mine, and I do not regret it at all.

Also, Go to Apple, that way you will get tons of accessories right off the bat.
 
I second the BestSkinsEver solution. I have them on my 3G and they provide great scratch resistance along with extra grip. I find the iPhone too slippery on its own. Another bonus is the screen doesn't get as many fingerprints on them, but the 3GS shouldn't have that problem anyway.

Just as an FYI, Best Skins Ever is the same thing as InvisibleShield at about a third of the price. With IS, you're paying for the warranty.

IMO, paying the shipping to send back your old/defective IS is not worth the hassle and I would rather pay the $8 for a brand new skin that ships in 2-3 days. You also don't have to worry about scratching your phone while you wait for the new one to come in.

On top of that, IS has horrid customer service (probably has a lot to do with their popularity) while BSE is very personal and accomodating. I sent them an email detailing how I had gone through several skins because of having to exchange my phone at the Apple store and they sent me two courtesy skins for being a loyal customer. When I used IS on my first gen iPhone and Blackberry Pearl, I attempted a warranty exchange for both. They refused my Pearl skin because I didn't return all pieces and my iPhone exchange is still processing (after almost two years, according to their website).

Wow thats horrid...and to think, I was about to buy IS for my iPhone and for my fiance's Samsung Solstise...

Do you know if they have a sheild for other phones?
