Can an MBP 16 Max do what a Studio can do for me?

Needs:
Run Lightroom; maybe video in future
Run Chrome
The MPB would need to run at least 2 external monitors cleanly - an Apple display and a 4K eizo
The Studio (not Ultra) would need to run three.

I know the specs say that they can but can they do so without bogging down?

Yeah if you can get by with 2 externals I’d go with the M2 Pro Mac Mini, if not then the M3 Pro MBP will be plenty.

M2 Pro Mac Mini can use 3 external displays:
  • Up to three displays: two displays with up to 6K resolution at 60Hz over Thunderbolt and one display with up to 4K resolution at 60Hz over HDMI
So if OP needs 1 Apple Studio Display and one 4k Eizo monitor then they can still connect another Apple Studio Display or any 4k60hz monitor.
