If I get an AppleCare plan (2 years) for a new iPad Pro today, but one year from now I upgrade and trade in my iPad Pro for a new model, will I be able to transfer the remaining 1 year of protection to the new iPad Pro?

There is no way to transfer the coverage. However, if you reach out to Apple support after buying the new device you can receive a prorated refund for the whatever period of the AC is left on the old iPad.

You can transfer the coverage to a new owner, but not a new device. Apple Care is linked to the device you own, so if you buy a new one, it needs to be a separated Apple Care plan. But if you want for example to sell your iPad Pro one year from now, you can transfer the ownership of the AppleCare plan, which can help to increase the resale value. But this would not help you if you trade in your device

The only way it gets transferred to a new device is when the original device is replaced under AppleCare. The plan transfers to the new device.
