Just curious, can apps access and make appointments on the integrated iOS calendar? Any examples?

Thanks!
Many third party calendar/to-do applications have that capability. Usually permission has to be granted for the app to be able to access the calendar.

And other core services: for example, Photos. Web browsers, Facebook/Instagram/Twitter/etc. Messaging apps.

Facebook: contacts, pictures.

Calendar/Reminders, other mail clients.

But as @C DM said, need to ok access.
