I’ve used one of Apple’s email addresses that it creates to hide your real one, which it forwards to my real account.

What I’m wondering is, if I use this ‘pretend’ email address for any login related to a project I’m working on, is it possible for Mail to have a dedicated folder for them?

I can’t work out how because the sender is the company sending the email - and I don’t want all of them going to a folder because I use them for other projects too.

But it seems like it should be an option, because presumably people use multiple of these Apple-created emails and might want to have some separation in the inbox?
 
Create a folder then create a rule that all messages TO <pretend address> route to that folder.

So the pretend address do actually count as the sender? Because they appear in Mail as the actual sender I’m hearing from, with my real email address as the recipient
 
Sorry, I meant the TO: address (it's cold here this morning, brain is slow). You can route via rule based on the <pretend address> they send to.
