Does anyone know if this is possible? I want to try the iPhone, thinking of picking it up tomorrow, but I don't want to port my number over until I know it works where I live, play, etc. Can I activate it with a new number, use my VZW call forwarding to send calls to it, and if I want to keep it past the 14 days, THEN port my number over?

And if so, can I do it all through iTunes, or do I have to go to an AT&T store to work it out?

Yes you can...that's exactly what I'm doing now. As far as I know, you have to port your number through the AT&T store. You can go in or call them...in either case, you'll need your phone numbers and your old account number from your former service provider.
