I got a new iPad, and I set it up as new instead of restoring from a backup. I don’t need everything I have on my iPad, but I don’t want to lose my Pages docs. Is there a way to only back up those particular documents so I would have access to them from my new iPad?
 
Double check your Files app or use the iCloud to back it up and then you will have access from iCloud or the Files app instead of restoring your whole iPad As long as your old iPad was using iOS 11 and good but double check And of course if you have a Mac you can export them through lightning cable from iPad to computer and then back Onto the new one if you don’t use iCloud
 
Are the files on iCloud? If so, just log into iCloud after you do the restore. If not, use the files app to copy them to iCloud.

You can still get to iCloud if you do a fresh install;
