Running iTunes 12.7.4.76 on 2017 15" MacBook Pro 14,3 macOS 10.13.4 with iPhone 8 on iOS 11.2.6

I created an iTunes library on my external hard drive (option + clicking iTunes icon in dock, create new library). I then backed up my phone but the options in iTunes were backup on iCloud or backup on this computer. I then checked the iTunes library that I had created externally and there was no file I could identify as a backup.

Did it back up on the external drive? / What would the file be called so I could look it up to confirm that?

Is it possible to backup externally still?

I'll leave the googling to you if you would like to do it, but essentially you plug in an external drive and create a symbolic link between the default backup location mentioned above and a folder on the external drive.
