So right now I have just the normal 9 inch iPad, and I am considering upgrading to the 12.9’ iPad Pro ina year or two, but I first want to have the iPad and use it for two weeks to test it out. Am I allowed to buy the iPad and use it for a few weeks and return it within 14 days and get a full refund? Almost sounds too good to be true

Yes. Target also offers returns with no restocking fee (30 day returns rather than Apple's 14-day return, PLUS 5% off if you use Target's Red Card).
