I just connected my Apple TV to my home theater and I'm wondering if its possible to play iTunes radio via Apple TV and control it with my iPad/iPhone without having to see the TV screen.

I know I can control iTunes radio from my iDevices if I am looking at the Apple TV menu, but is there a way to do it without having to look at the TV and just from the iPad/iPhone itself?

You can control your iTunes library on your computer, including radio stations, with the Remote app. Then use Airplay to send it to your Apple TV.
 
There is a way to control iTunes radio stations from Apple TV

If you make a play list of any of the iTunes radio stations you want to listen to, that playlist will appear on your iPod Touch, iPhone, or iPad in the remote app. Its a work around, but it works.

I was just coming back to say that. Got an Express today and noticed 'Radio' as one of the options on Remote.
