Media will be fine if they are in your iTunes library.
Need some extra actions if they are in a specific app.
However, since you can not restore from a newer version backup, the best you can try is to shift/option+click “check update” to downgrade and hope you are lucky. Something, like messages, may be screwed up and you will lose them.

"Apple’s page details that users do have the ability to downgrade from the iOS 11 beta, but only back down to iOS 10.3.3."

I'm currently on iOS 10.3.2 which is the latest public release and planning on trying out the public beta of iOS 11. Just in case any problems arise, will I be able to restore my iPad using the backup from iOS 10.3.2 or will this cause problems? Maybe I can only downgrade to the iOS 10 beta before I can leave the beta?

You use 10.3.3 to then downgrade back to 10.3.2

I would just stay on iOS 10 tbh

I just downgraded. First you need to downgrade to 10.3.3 by downloading the IPSW from Apple, then holding Option key and clicking restore (after putting the device in DFU mode), and then choosing the IPSW file. It will restore it to 10.3.3 beta.

After that, just repeat the process (DFU mode again) but this time just click restore without the Option key. It will revert from 10.3.3 beta to regular 10.3.2

It doesn't take that much time and it isn't at all as complicated as it may seem.

I don't recommend installing iOS 11 it's very buggy and unusable. However if you're going to update anyway, take a backup before updating. If you already updated you can take a backup and then edit the version of the backup and you may be able to restore from it once you downgrade. As for the media, iTunes doesn't backup your Movies, TV shows, Books in iBooks so you have to sync them to iTunes first and once you restore it will sync them back to your device.

Thanks everyone! I decided to just try iOS 11 beta on my old iPad Air 2 for now.

It is pretty unstable.
