I noticed every app I ever downloaded was in iCloud. I want to delete a bunch of them that I was just sampling. Is it possible?
 
Do you mean in the "Purchased" section of the app store? If so, you can hide them. Just slide your finger left to right across the app's entry in the purchased list and you will then be presented with a Hide button.
 
Right, in the purchased section. I'm curious about hiding as opposed to deleting. I really do not have any need for many of them and hiding is just taking up space. Is this another "Apple thing" that I cannot delete them?
 
U can just hide them and have all of your hidden apps in the "hidden" section. Since they re just on apple servers and you can see just the entry in your list, they don't take any of your space and you can have as many hidden apps as you wish but no, they can't be deleted as far as I know.
