I am planning on getting my son an iPod Touch for Christmas and have already set him up with an iCloud account to use with the Touch. My question is, when I setup the iPod Touch for the first time, can I use his iCloud account for the original setup and then use my Apple ID to access my iTunes account so my music and apps are available to him?

Yes, thats how my wife and I are setup. When I setup her 4S I restored her iCloud backup with her iCloud account and then after it was booted I went into Settings > iTunes & App Stores > Apple ID > Sign Out and sign in as the iTunes ID we share.

Perfect!! That's what I was planning on doing and hoped that it would work. With his own iCloud account, does that mean he will have his own iCloud backup as well and won't eat into my 5gb iCloud limit?

Correct! He is on his own now for iCloud...so backups, email, bookmarks, etc are on his iCloud Account you are just sharing iTunes Account info for app sharing.
