I just got a new iPod touch primarily for the car and the gym so wanted to just download everything in my library for offline play.

Is this possible?

I'm not looking forward to making every album available for offline play one at a time.

Does not seem that option to available at the moment not even for a Playlist you have created. You would think the option Album Offline or Playlist Offline would have been available when Apple Music launched. This are few or many issues with Apple Music.
 
It's very easy to make a playlist available for offline play. Go to My Music > Playlists and tap on the ellipsis next to the playlist name. Then choose Make Available Offline. To make all of your music available, just make a playlist in iTunes and add all of your songs to it.

Good idea adding every song to a playlist and then making that available offline. managed to download everything.

Unfortunately you don't then get the offline logo on the songs which they really need to fix.
