I have saved the Mavericks Installer from the App Store. It still functions fine but is no longer available unless you saved it while it was available.

I would like to know if I can do the same for Yosemite? The Mavericks Installer is no longer available from the App Store. So I expect the same to be true before too long for Yosemite, once El Capitan is officially released.

You can save an installer easily enough, but you can also still download the older versions of OS X installers from the App Store, under the Purchases section, as long as you've already "purchased" a copy.

I don't think that Mavericks is available any longer.

It is not. I have it in my "Purchases" tab but it's not a link to the App Store page for Mavericks anymore, it also says "Downloaded" on the button to download it (I happen to have it downloaded as I needed it for work and my work Mac wouldn't download it).

If you have Mavericks in your App Store / Purchased tab, then you can still download that Mavericks installer.
If it is showing as "Downloaded", then that just means the installer app already is on your hard drive, probably where the App Store put it (in the Applications folder)
If you want to download the Mavericks installer again, then you have to delete the existing Mavericks installer.
Then, you will be allowed to download it again. (I am sure about this, as I downloaded the Mavericks installer just a couple of days ago)
One caveat: you won't be able to download an OS X installer, even if it is one of your purchases, unless the Mac can boot with that version. For example, I can't download Lion on my 2012 mini, but I can download the Mountain Lion installer. I can download Lion on my old MacBook that maxes out with Lion, but I can't download Mountain Lion, or anything newer.

It will still work to download it if you don't already have the installer on your computer. I can go back and download Mountain Lion if I want. As long as you installed it when it was current it will stay in your purchases tab and be available.
