We have 4 Mac Mini Servers already and we may be buying another one or two but I'd like to order Mac Mini's with two hard drives. This way I can mirror the drives. This has come in handy when I HD has died and it still runs. Just need to replace the bad HD. With a fusion drive I don't need massive amounts of data. 2x500GB or 2x1TB HD's would be fine.
 
Not in a 2014 model, but you can get a 2012 and either get it with the drives already or add them yourself later.
 
Apple have stopped selling mini's with two HDD spaces ( unless can find a refurb 2012 )

You can get

1 HDD with 1 unused PCI-E sot for SSD Card
1 PCI-E SSD with unused HDD slot
1 Fusion Drive that uses PCI-E SSD and 1 x HDD.

2012 models all have space for 2 x HDD/SSD but only the actual server model, or Fusion Drive systems came with the cables for connecting two HDD.

Or can buy a regular 2012 and just buy the OWC Data Doubler to allow to fit two disks in there.
 
If you're in the USA, I believe B&H Photo (New York City) still has some "new old stock" late-2012 2.3ghz i7 Mini "server edition" models equipped with 2 1tb drives inside.

At least they still had some as of yesterday...
 
As fishrrman related, we picked up two of these NOS Mac Servers from B&H recently for my field office:

And I snagged the same configuration from Apple as a refurb for $180 less. The refurb seems to have some issues "sticking" with "remembering" the video resolution, I'd been reading about some of these particular units having problems with the Intel video card, so the refurb may be going back.

Other than that, a nice unit. Added RAM, set it and pretty much forget it.
 
Thanks for the info. I haven't looked at the exploded view yet so I didn't realize they got rid of the dual HD/Server.

With Profile Manager having no backup option I like having a mirrored HD. Having an external HD for each server as a backup takes up a lot of space.
