For some reason there are a few people that like to send emails to me and everyone else they know. The problem is when I view the email on my iPhone I have to scroll through all of the To: and CC: email addresses to get to the text of the message? It would be great if I could set the default to be collapsed and then tap the '+' sign to expand to see the list of people on the email.
 
That's how mine works. If you click the 'hide' button at the top, do they not stay hidden when you open mail the next time?

EDIT: Ah. Go into the Preferences for Mail. There's a toggle switch to show or not show To/CC labels. Turn it off.
 
Another tip: Ask people who send email to everyone they know to use the BCC field. There's no good reason for them to share your email address with everyone else they know. And you've identified another reason they shouldn't do this.

I've often asked people to make this change. For the few that kept spamming me with mass emails, still using the TO list, I asked them to take me off of their list entirely.

Then if you ever want to reply to all; say you see 3 people CC'd in and want to reply to them, the people on BCC will also get the email and you'll never know who's getting it.

Your replies won't go to the BCC list, only to to the people you see in the TO or CC field, or those you add to those fields yourself. There's no secret BCCing from using Reply All.
