I have a MBP with a 2.53ghz, 4gb ram, and a 250gb hard drive. Can I do it? Also, would this be better than the 32-bit?

Yes, you can run it, and yes, you would see a performance increase over the 32-bit version.

Apparently there's been problems with drivers and stuff as of late, but if you have to patience to wait until SL is released, Bootcamp 3.0 will hopefully fix them.

It seems to be hit or miss right now as to people getting it working correctly or not.

I have tried both Windows 7 32-Bit and 64-Bit on my white MacBook (with 4 GB RAM) using Parallels 4, this works quite well, the 64-Bit is substantially faster.
